Our first Sarchimor varietal and our first coffee processed in the reposado natural style. Finca Matilde is the farm of our good friend and associate Dylan Aguilera, Costa Rican cup tasting champion. Dylan runs the farm with his father Bernabe. The Aguilera family is a coffee producing dynasty in the west valley of Costa Rica. As a third-generation coffee expert and Licensed Q Grader, Dylan has embraced his family’s legacy of coffee excellence.
The coffee has wonderful blueberry flavours and aromas, some dark cherry and dark chocolate. We have been brewing some delicious short espresso based drinks with it as well as enjoying its balance and complexity as filter.
