Why this coffee?
There is plenty of washed Guatemalan coffee produced every year, most of which is very good, but Las Moritas stood out for us with its clean and sweet profile which we really enjoy. The varietal Pacamara is also a little unusual, a cross between the petite Pacas and the massive Maragogype.
Where is it grown and Farmed?
Las Moritas is a 70 hectare farm with 56 hectares devoted to numerous varieties of coffee. The farm has a diverse topography of hills, mountainside, flat planes and even cliffs which the workers still manage to harvest. It comes from an area less known in the Guatemalan coffee world; Sierra de las Minas, part of the eastern mountainous area.
How has the coffee been processed?
The coffee has undergone an extended initial fermentation prior to hulling and then being fully washed.
What can you expect from the smell and taste?
Excellent balance of complex sweetness and acidity. Red apple, cherry, passion fruit, light caramel like honeycomb, changing and developing as it cools.
How do we like it?
It doesn’t disappoint however you brew it but a pour over or aeropress produces a really satisfying sweet and juicy expression of this coffee.
